Ice Ice Baby and Starbucks Giveaway

Jan 16-31.jpg

Yesterday I woke up to a surprise…

Old Man Winter had come for a visit and left me a gift of snow and ice. In the south, it is a rarity and not appreciated at all. I still had to get to the church which is 25 miles away from where I live. As I was headed for the interstate, I received a message that said bad wrecks and interstate was at a standstill, so a little detour and I take the old highway.

I have been gone about 15 minutes, (by this time I normally would be just a few miles away) when I received another message this time from my church letting me know that services where canceled. At this time, on a Sunday morning, most of everyone is still tucked snuggly in their beds but because we have to be at church so early to help prepare for services, I wasn’t in my bed snuggling, I was on ice and snow.

My daughter had spent the weekend at her grandfather’s house so there was no turning around and heading home for me, so “ice ice baby” it was until we finally arrived to pick her up and head the 25 miles back home.

But we did make it home safe and spent the rest of the day indoors, on the couch with a cup of hot coffee, while a steaming crock pot of chicken and vegetables smelled the house up till dinnertime.

I can’t be too upset though, I think it was in perfect timing for MamatheFox’s “Ice Ice Baby” Giveaway Hop. And what better way than to warm than with a cup of Starbuck’s!

Cherry, Chocolate-Chip Cheese Pie ❤️

My family loves Cheese Pie.

You might be asking yourself, “What is a Cheese Pie?”

And I have the answer for you!

A Cheese Pie is almost like a cheesecake but it not firm. It sets up like a pie and oh how delicious it is!

I grew up on my momma’s homemade Cherry and Blueberry Cheese Pie at every special holiday or event. My kiddo’s didn’t have much choice but to love them since it is a family favorite, and my hubby, well, its sweet and has cream cheese, right? Need I say more!

I love making recipes that my momma made, but I also like to recreate my own recipes to add my own spin on them.

But with the new year brings new resolutions right? And normally those resolutions include exercising and eating healthy. I really wanted to make a Valentine theme cheese pie but just a healthier version, and that is when I thought Yogurt!!

Yogurt is a major snack food in our house right now. It’s quick, tasty and healthy so it’s a win win for me!

So I thought, “Why couldn’t I use it in my Cheese Pie?” It would cut down on some of the sugar but you still have the sweetness of the pie.

And since it is a Valentine theme dessert, I couldn’t resist using my adorable mini heart pie pans!

Aren’t they so sweet?

Okay, so are you ready?

What you need:

8 ounces of Original Greek Yogurt

8 ounces of Cream Cheese softened

1/4 cup of Maraschino Cherries Chopped Finely

1/8 cup of Maraschino Cherry Juice

2 cups of Powdered Sugar

2 tsp of Vanilla

1/2 cup of Mini Chocolate Chips

What you do:

1) In a large bowl, mix together Greek Yogurt, Cream Cheese, Powdered Sugar and Vanilla until completely creamed together.

2) Next add in Chopped Cherries and Juice and mix.

3) Gently stir in Chocolate Chips.

4) Pour into desired crust.

(I used a Homemade Chocolate Graham Cracker Crust, but you could use a regular graham crust)

5) Refrigerate for appx 30 minutes to set.

6) Serve and enjoy!

*If you would like to use my Homemade Chocolate Graham Cracker Crust just follow recipe below!

What you need:

2 Sleeves of Chocolate Graham Crackers

1/2 cup of Butter

2) Melt your butter completely.

3) Pour crushed graham crackers and butter into bowl and stir together until graham crackers are completely soaked by butter.

4) Pour into a pie pan or plate and press down completely to form crust shape.

5) Bake at 350 F for appx 10-12 minutes to set crust.

6) Make sure to cool completely before pouring Cheese Pie into crust.

Hope you enjoy this healthy version on my momma’s cheese pie!

Winter Fun Mini Play and Learn

The Holidays may be over but winter is in full force. Blizzards in the North followed by bone-chilling temps in the South. And what is with the snow in Florida?

Having small children stuck inside during the winter has its challenges for sure. Finding ways to occupy small minds during the cold days will have you longing for warm summer days, green grass and sprinklers.

There is only so many cartoons to be seen, toys to play with and mess to be made before the children are bored again and mom is pulling her hair out!

That is where my Winter Fun Mini Play and Learn Printable Pack will help with a few more hours of play time for the kiddos and quiet time for the moms

In the pack you will find the following fun activities:

  • Memory Matching Game

  • Coloring Sheets

What you will need to have on hand:

  • Crayons or Markers
  • Scissors
  • Cardstock and Laminate (if you prefer longer lasting durability)

Hi Y’all

Hi Y’all,

I’m Miranda, a quirky 30 Something Bookworm, Vegetarian, Coffee Lover, Bibliophile Addict and Animal Obsessor.

Oh okay, I’m 39, and yes I am very quirky. There is definitely not another me out there, which the universe should be thanking God for. (:  I have been a vegetarian for 13 years. I would say vegan but I do eat cheese!  Sorry, I love cheese!!!  And BUTTER!  Butter is my friend, seriously my friend.

I am a Freelance Writer/Editor and Student. Yes, I’m a student even though I am dinosaur age, which takes me to my next love, COFFEE!!  I function only with an IV of coffee running through my veins.

It is true, I am a bibliophile addict; I might need an intervention soon. Or so my husband says!

And well animal obsessor, yikes, I’m not even sure if obsessor is a strong enough word for my love for all creatures. Okay, maybe not snakes, oh and brown recluse spiders.

I am completely obsessed with my Shih Tzu Johnny Cash, AKA Cashy.  He is my lifeline. He completes me!  I told you I am obsessed.

I am a married to my sexy, bearded man with three children. I am a homeschool parent who waited until my kids were in High School and could maintain self-sufficient homeschooling before I decided to chase my dreams.

I live in a very rural area where County Fairs are the highlight of the year; Friday Night Football is an absolute must, and you see more cows as you drive down the road than people.

Who I am kidding, there are cows everywhere and did I mention turkeys and chickens in my backyard?

Join this booknerd as I look at life through my glasses lens….
